Nothing beats a breakfast sandwich

Mornings are hard, no matter what yours consists of, or how much coffee you have at your disposal. Need a little motivation to get up and get going on this morning?

Look no further-  the VJC breakfast menu can alleviate some of those morning blues. 

And one of the greatest breakfast /  brunch options out there? A breakfast sandwich. But these are far from your typical drive-thru breakfast sandwich… here at VJC, we take pride in serving up these delicacies the right way. 

Served until 10:30 on weekdays and all day on weekends, you can come get your hands on a delectable, handheld sandwich to start your morning off right. 

Both of these sandwiches are perfectly customizable, meaning your ideal breakfast sandwich creation is entirely possible. But, we think we’ve nailed some combinations of flavors and textures that will surely start your day sunny-side up :) 

First off, we’ve got:

THE NEW CLASSIC. 

The name says it perfectly- this is quickly going to become your new go-to, classic breakfast order. And this sandwich does it all- you’ve got healthy fats from the avocado, a dose of greens with the kale, and plenty of protein from a fried egg. All of this nutrient-dense goodness is sandwiched between thick brioche from Union Special, which is slathered with our cashew “mayo.” Don’t you just want a bite already?

Equally delectable is our take on a breakfast BLT:

THE POWER PLAY. 

Also featuring the tasty Union Special brioche, this breakfast sandwich does not play around. Our addition of cashew aioli pairs perfectly with the juicy tomato, crispy bacon, a fried egg, and fresh arugula. 

Our variations on mayo and aioli, using cashews instead of dairy, are just as delectable as the classic egg filled sauces you might be more familiar with. Hooray for plant-based takes on these staple American spreads!

Did you know?

  • The word brioche is derived from the verb “brier”, which is derived from northern French word “broyer” which means to knead.

  • Eggs are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper.

  • Why do we eat eggs in the morning anyway? One theory is this: since chickens lay eggs in the morning, farmers would grab them for breakfast.
